    Sneaky Spinach Pesto

    Introducing a secret healthy weapon: Spinach Pesto Pasta! This vibrant dish combines twirls of pasta with a velvety spinach pesto that's so delicious, you won't even taste the spinach. It's my go-to for quick pasta nights that deserve a little extra flair and a lot more veggies!

    Equipment

    • 1 Food Processor (or blender)

    Ingredients
      

    • β…“ cup Walnuts
    • 3 cups Fresh Basil Leaves
    • 2 cups Fresh Spinach
    • 2 cloves Garlic
    • 3 tablespoon Lemon Juice (roughly 1 lemon)
    • 1 tablespoon Nutritional Yeast
    • β…“ cup Extra Virgin Olive Oil
    • Salt & Pepper to taste

    Instructions
     

    • Put everything in a food processor and process until incorporated, adding more salt, lemon for acidity, garlic for spice, or nutritional yeast for nuttiness as desired.
