    This cauliflower blueberry oatmeal is a next level breakfast! If you're thinking to yourself, why would I want to put veggies in my oatmeal, I get it!! The reason I love it is it actually enhances the oatmeal. Trust me, just try it, you're never going to go back!!

    Cauliflower in Oatmeal??

    Hear me out, this hidden veggie adds fluffiness to the oatmeal and you can't even taste it, I promise!! Plus, it's kind of cool to start your day with a serving of veggies as well as 2-3 servings of fruit!!

    In this recipe, I use riced cauliflower which helps make it even fluffier and adds extra nutrients. Cauliflower is a great source of fiber as well as vitamins C and K. The cinnamon and vanilla flavoring masks any thought of a vegetable being in this breakfast.

    Simple One Pot Recipe

    Not only does this recipe contain many nutrients from the oats, fruit, and cauliflower, it also is really simple to make. All you need to do is pour everything into your pot and stir until it's all incorporated. It usually takes me 10-15 minutes to stir until it becomes this gloopy consistency. And I mean gloopy in the best way!

    Cauliflower Blueberry Oatmeal

    This vegan cauliflower blueberry oatmeal is a great way to sneak in a veggie to your breakfast. Adding riced cauliflower enhances the texture and nutrients

    Ingredients
      

    • ½ cup oats
    • ½ cup riced cauliflower I use frozen, you can use fresh
    • 1 cup wild blueberries or sub other fruit you'd like
    • 1 cup liquids I used ½ almond milk, ½ water
    • 1 tablespoon peanut butter or non nut butter if nut free
    • 1 tablespoon maple syrup
    • 1 teaspoon vanilla
    • 1 ½ teaspoon cinnamon
    • 1 banana
    • salt

    Instructions
     

    • Mix all together in a pan on medium heat for 10-15 minutes or so until incorporated and enjoy!
