    Super Green Salad with Turmeric Lemon Dressing

    If there’s one stereotype I’m on a mission to debunk, it’s the notion that salads are the poster child for boring and sad meals. We’ve all had that sad iceberg lettuce salad with a few shredded carrots and a tomato. It’s not really satisfying and it definitely doesn’t make you HAPPY. So, I’d like to welcome you to my “NOT Sad Salad Series!” And welcome to this recipe: Green Salad with Turmeric Lemon Dressing. This salad has a symphony of textures and nutritional benefits.

    I want to shake up the salad world with creations that make you smile, and happy! I like to combine a variety of flavors and textures, making salads fun and always dressed with a homemade dressing. In this salad series you can always expect a salad that is easy to make that incorporates many nutritional elements that work together. You’ll be getting a hefty serving of veggies (some fruits and nuts likely as well!), plant-based protein, and a tasty homemade dressing.

    Let's talk about the nutritional elements of each of the components of this super green salad!

    Nutrition Breakdown

    Romaine Lettuce: While lower in calories than other greens, romaine lettuce is rich in vitamins A, K, and C. It also contains folate, manganese, and chromium, supporting overall health.

    Green Cabbage: Cabbage is low in calories and high in fiber, making it great for digestion. It's also rich in vitamins C and K, as well as antioxidants like polyphenols.

    Basil: This herb is a good source of vitamin K and manganese, which are important for bone health and metabolism. Basil also contains antioxidants and essential oils with potential health benefits.

    Mint: Mint is known for its digestive properties, helping to soothe the stomach. It also contains vitamins A and C, as well as antioxidants, which may have anti-inflammatory effects.

    Celery: Low in calories, celery is high in fiber and water content, aiding in digestion and hydration. It also contains vitamins A, K, and C, along with minerals like potassium and folate.

    Black Beans: Black beans are a great source of plant-based protein and fiber. They're also rich in folate, iron, and magnesium, which are important for energy production and muscle function.

    Cucumbers: Cucumbers are hydrating due to their high water content. They're also low in calories and a good source of vitamins K and C, as well as antioxidants like beta-carotene.

    Turmeric: Known for its anti-inflammatory properties, turmeric contains curcumin, a compound with potential health benefits. It also has antioxidant properties and may support heart health and brain function.

    The mint and basil add a freshness to the salad that is further enhanced by the dressing. The lemon in the dressing allows this salad to be even fresher. I hope you enjoy!

    Green Salad with Turmeric Lemon Dressing

    This super green and fresh salad with turmeric lemon dressing comes together in 15 minutes and is so fresh from the basil and mint.

    Ingredients
      

    • 1 ½ cups chopped romaine lettuce
    • 1 cup chopped green cabbage
    • ¼ cup chopped fresh basil
    • ¼ cup chopped fresh mint
    • 2 stalks of celery chopped
    • ½ cup cucumbers chopped/sliced
    • 1 15 oz can black beans

    Turmeric Dressing

    • ¼ cup olive oil
    • ½ lemon juiced
    • ½ teaspoon turmeric
    • ½ teaspoon dijon mustard
    • 1 clove garlic minced
    • ¼-1/2 teaspoon black pepper
    • salt to taste

    Instructions
     

    • Chop all your vegetables then mix all your dressing ingredients together until combined
    • Add all of your veggies then dress, toss, and serve!
    • Since romaine lettuce is one of the bases of this salad, it does not keep for as long as other (kale based) salads so eat this one within a day or keep the dressing on the side until prior to eating.
