    Moroccan Chickpea Tomato Stew

    Whip up this vibrant Moroccan Chickpea Tomato Stew by simmering chickpeas, tomatoes, and an array of aromatic spices. In under 30 minutes, you'll have a delectable, healthful stew that's vegan and flavor-packed!

    Ingredients
      

    • 1 15 oz can chickpeas
    • 3 garlic cloves
    • 1 yellow onion
    • 2 tablespoon extra-virgin olive oil
    • 1 15 oz can diced tomato
    • ¾ teaspoon ground cinnamon
    • ¾ teaspoon cumin
    • ¾ teaspoon ginger
    • 1 ½ cup vegetable stock

    Instructions
     

    • Chop your onion and mince your garlic then put in a saucepan with your oil
    • Stir for a few minutes until fragrant.
    • Pour the rest of your ingredients into the saucepan, stir, then cover. Cook on medium heat for 25 minutes stirring once or twice
    • After 25 minutes, most of the liquid will be absorbed and you’re left with a flavorful dish, enjoy!
