    There's something undeniably comforting about indulging in a dessert, isn't there? It's as if with every bite, we're wrapped in a blanket of joy and satisfaction. This is exactly why I love creating dessert recipes and am loving my Vegan Gooey Brownie Pie Cups. These little cups are not just a treat to your taste buds but a nod to healthier dessert alternatives that don't skimp on flavor or texture. After all, craving dessert is a natural human instinct, so you may as well satisfy your cravings!

    Cocoa Powder Health Benefits & Refined Sugar

    Cocoa powder, the star of this recipe, is a powerhouse of antioxidants, offering benefits from improved cholesterol levels to enhanced heart health. But let's talk about the elephant in the room: refined sugar. It's no secret that refined sugar, while delicious, isn't the best for our health, especially when consumed frequently. It can spike blood sugar levels, lead to weight gain, and even affect your mood. That's why these brownie pie cups (and most of my desserts) are crafted without it. I think you can still get the sugar flavor with using refined-sugar free alternatives

    Refined Sugar-Free Alternatives

    Refined sugar is essentially sugar that has been processed to remove the molasses, resulting in a finer grain. It's everywhere in our diets, from sodas to store-bought desserts. But fear not, my sweet-toothed friends, there are alternatives like maple syrup and coconut sugar that are refined sugar free. These natural sweeteners not only provide a rich depth of flavor but also retain some nutritional benefits, making them a fantastic choice for our brownie cups.

    The Flavor and Taste of Nutty Gooey Brownie Pie Cups

    The magic of these brownie pie cups doesn't end with just being refined sugar-free. Imagine biting into the nutty crunch of pecans, balanced with a sprinkle of flaky sea salt that dances on your palate. The center? A dollop of coconut yogurt, adding a creamy dreaminess that complements the dense, gooey brownie base. It's a symphony of flavors and textures that come together in perfect harmony.

    Nutty Brownie Pie Cup

    Gooey Brownie Pie Cups

    These Vegan Gooey Brownie Pie Cups are a healthier dessert alternative, refined sugar free, featuring the rich taste of cocoa, the crunch of pecans, a hint of sea salt, and a creamy coconut yogurt center.

    Ingredients
      

    • 1 ½ cups almond flour
    • ¼ cup cocoa powder
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 tablespoon apple cider vinegar
    • ⅓ cup agave/ honey
    • 1 teaspoon vanilla extract
    • ⅓ cup oil I used olive oil
    • Nuts of choice to top I used pecans + salt
    • 1 cup water

    Frosting/Gooey Center

    • ⅓ cup non-dairy yogurt
    • ¼ cup cocoa powder
    • 2 tablespoons maple syrup

    Instructions
     

    • Preheat the oven to 180C/350F. Spray muffin tray with avocado oil/line with baking cups
    • In a large mixing bowl, add your dry ingredients then add the wet ingredients and mix until a smooth batter remains.
    • Transfer to the muffin tray and bake for 15-17 minutes, they will still be a bit gooey on the inside.
    • Meanwhile, make the frosting by combining the non-dairy yogurt, cocoa powder, and maple syrup for sweetness.
    • Once the “gooey pies” have been out of the oven for 3-5 minutes, put the frosting mixture inside and spread. Top with pecans and salt. Best enjoyed while warm for maximum gooey-ness
    • Store in the fridge for 5-8 days!
