Enter the Sneaky 7 Veggie Pasta, a culinary marvel that's about to change the way you view your vegetable intake.

    Vegetable Nutrition Breakdown

    Vegetables are the unsung heroes of the culinary world, brimming with vitamins, minerals, and fiber, essential for maintaining a healthy body and mind. However, incorporating enough of them into our diet can sometimes be a challenge. This is where my secret sauce comes into play, sneaking in nutrient powerhouses like tomatoes, carrots, bell peppers, and zucchini. Each of these vegetables brings its own set of health benefits to the table:

    • Tomatoes: Rich in vitamins C and K, potassium, and folate, not to mention the antioxidant lycopene, which has been linked to reduced risk of heart disease and cancer.
    • Carrots: High in beta carotene, which your body converts into vitamin A, crucial for good eyesight, growth, development, and immune function.
    • Celery: Provides antioxidants and important minerals such as potassium and vitamin K, supporting bone health and blood pressure regulation.
    • Bell Peppers: Packed with vitamins A and C, two powerful antioxidants that help maintain skin health and immune function.
    • Garlic: Known for its medicinal properties, including its ability to combat sickness and improve heart health.
    • Zucchini: High in fiber, water, vitamin A, and other antioxidants, promoting a healthy digestive system.
    • Onions: Rich in vitamins C and B, they are potent in antioxidants and support immune health.

    Not to mention, it's super simple to make. You just need to chop all of your vegetables, put them on a sheet pan to roast in the oven, then blend them all up! It's that simple!

    Sneaky Veggie Pasta

    Sneaky 7 Veggie Pasta

    Sauté and blend tomatoes, carrots, celery, bell pepper, garlic, zucchini, and onion to create a creamy, rich pasta sauce that's loaded with nutrients and flavor.

    Ingredients
      

    • 4 tomatoes vine
    • 2 carrots
    • 2-3 celery ribs
    • 1 red bell pepper
    • 1-2 zucchini
    • 1 yellow onion
    • 1 head of garlic
    • 2 teaspoon salt
    • 1 teaspoon pepper
    • 1-2 teaspoon dried thyme
    • ⅓-1/2 cup almond milk or pasta water
    • cilantro or parsley to top
    • Pasta of choice to serve 4 I used chickpea pasta

    Instructions
     

    • Preheat oven to 400F and roughly chop all veggies and put them on a parchment lined baking sheet. Put some avocado oil and salt/pepper on the veggies
    • Stick them in the oven for 45 minutes then add the veggies to the blender and squeeze out the garlic cloves from the skin. Add your thyme and almond milk/pasta water.
    • Blend! It took me about 3-5 minutes of blending to get this mixture super creamy.
    • Add to your cooked pasta and enjoy! I topped mine with cilantro and red pepper flakes
