    Mango Sticky Rice

    My love affair with Mango Sticky Rice began in a quaint Thai restaurant nestled in the bustling streets of the Bay Area. That first bite was nothing short of revelatory, a sweet and creamy harmony of flavors that immediately captured my heart. It used wild rice and we poured the coconut cream right on top at the table. The dish was so memorable that it sparked a culinary quest to recreate it at home. I wanted capture the essence of that perfect dessert. And thus, this recipe was born!

    Fast forward a few months, and I found myself wandering the vibrant markets of Thailand. Mango Sticky Rice was a staple, not just a dish. Every restaurant visit was an opportunity to indulge in my newfound obsession. The combination of the sticky, creamy rice paired with the sweetness of ripe mango was an unbeatable duo. It's a testament to the simplicity and elegance of Thai cuisine.

    Ingredients

    Mango, one of my all-time favorite fruits, isn't just delicious. It's a nutritional powerhouse. Rich in vitamins A and C, mangoes support immune health and provide powerful antioxidants. In this recipe, I've decided to put a healthy twist on the traditional by opting for brown rice over the customary white sticky rice. Brown rice retains its bran and germ layer, offering more fiber, vitamins, and minerals. It makes this beloved dessert not only indulgent but also a tad more nutritious. It also is an ode to my first experience with wild rice as the base.

    But fear not, the essence of the classic Mango Sticky Rice remains untouched. The brown rice still achieves that delightful sticky and creamy texture, perfectly complementing the luscious slices of mango.     vegan mango sticky rice

    Mango Sticky Rice

    Cook brown rice until sticky and creamy, then pair with fresh, ripe mango slices for a healthier take on the traditional Mango Sticky Rice.

    Ingredients
      

    • 1½ cups glutinous sweet brown rice
    • 1 cup unsweetened coconut milk
    • ⅓ cup sugar
    • ¼ teaspoon salt
    • 2 large mangoes

    Instructions
     

    • Wash your brown rice a few times then soak overnight in cold water on the counter.
    • Steam your rice (I put water in a pan with a steamer inside and closed the pan with a dishcloth between the lid and rice. 30-40 minutes, until tender
    • While the rice is cooking, boil the coconut milk, sugar, and salt in a pan
    • Once the rice is finished, pour the rice in the pan with the coconut mixture. Allow it to sit for 30 minutes (up to 2 hours)
    • Slice your mangoes and plate with ¼ cup of rice on a plate
    • Enjoy!
