You're going to be going BANANAS, B-A-N-A-N-A-S for this recipe!! It's a 2 ingredient (well 3 if you want to add a splash of vanilla) super easy vegan dessert. I ALWAYS have frozen bananas in my freezer and eat this weekly in the summer. It's the perfect base to any sundae and is surprisingly creamy given it's made of bananas not milk/cream. When I went more plant-based, I was looking for an ice cream substitute that still was creamy (not like many sorbets), and didn't feel super sugary. Enter- Nice Cream!
Toppings: The World of Customization
What I love about this recipe is that the base of the ice cream is so simple and you can add customization through toppings. I like thinking about toppings from a few different angles: texture, freshness, flavor, salty/sweet.
I love a classic warm hot fudge and salted peanuts combo but I also love chocolate chips to add a crunch and small bits of strawberry to add a burst of freshness and flavor. I'm inventing a new word here: toppingscape. Get creative, go have some fun here with your toppings because it really elevates this nice cream (which is delish on its own, but that's if you are into plain vanilla ice cream).

Simplicity
Now, let's talk about simplicity. Nice cream is all about keeping things easy and accessible. If you're out of almond milk, don't worry about it; a simple swap with water works like a charm and still delivers a creamy texture and great taste. Just add a bit more vanilla and toppings for more flavor.
The bananas add enough creaminess on their own making this recipe easy to make by just blending or processing bananas and your liquid of choice.

Nice Cream
Ingredients
- 2 frozen bananas
- 2-4 tablespoon almond milk
- 1 teaspoon vanilla optional
- Optional toppings peanuts, chocolate chips, fudge, strawberries
Instructions
- Put the sliced frozen banana and almond milk in the food processor (can also blend in a blender). Add vanilla if desired. Process until incorporated (this can work in a blender too but is a bit tricker to scoop it all out)
- Chop peanuts, strawberries, and chocolate chips and top nice cream
