Okay, so we all know what avocado toast is, we've all had avocado toast. But, this avocado toast packs some protein and has some fun sweet and savory options! The Avocado Bean Toast is just the base for toppings and different flavor combos. Which is kind of the most fun part!

Nutrition Info of Avocados and Cannellini Beans
I made this recipe to add more protein into my toast through the mashed cannellini beans. Cannellini beans are a great source of plant-based protein and they're high in fiber. Since they're high in fiber and protein, they keep you full for longer. They're also a great source of iron!
Avocados are high in vitamins K, C, E, and B-6 along with riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They're also a great source of healthy fats, monosaturated fats, which can help lower cholesterol.
The Toppings
Now, to the fun part- the toppings! I'm a sucker for a sweet and a savory option in whatever I eat so that's why I created both options:
1. a savory with sauerkraut, everything but the bagel seasoning, olive oil, and hot sauce
2. a sweet with honey, red pepper flakes, sea salt flakes, and olive oil.
You can't go wrong with either so you should probably try them both! I like making a toast of each!!

Protein Avocado Bean Toast
Ingredients
- 3 avocados
- 1 15 oz can cannellini beans rinsed and drained
- 1 - 1 ½ lemons juiced
- 3 cloves garlic roasted
- salt & pepper to taste
Savory Toppings
- everything but the bagel seasoning
- drizzle of olive oil
- 2 tablespoon sauerkraut per toast
- hot sauce of choice I used a pineapple Zabs hot sauce
Sweet Toppings
- honey drizzle or agave for vegan
- olive oil drizzle
- red pepper flakes
- sea salt flakes optional
Instructions
- Rinse and drain your beans then add them to a bowl with your avocados and mash until smooth
- Mince your garlic then sauté on a pan with a bit of olive oil over medium heat for a few minutes until crispy
- Add your crispy garlic, lemon juice, and pepper to your avocado bean mixture the mixture with the lemon, salt, and pepper
- Spread your mixture over your favorite toast then add sea salt flakes on top. Choose whether you’re feeling sweet or savory then top with the appropriate toppings and enjoy!
- The mash can be stored in an airtight container in the fridge for up to 4 days though the top will start turning brown. I recommend storing with the pits from the avocados inside to keep the mash green
