    If there’s one stereotype I’m on a mission to debunk, it’s the notion that salads are the poster child for boring and sad meals. We’ve all had that sad iceberg lettuce salad with a few shredded carrots and a tomato. It’s not really satisfying and it definitely doesn’t make you HAPPY. So, I’d like to welcome you to my “NOT Sad Salad Series!” And welcome to this recipe: Ginger Vinaigrette Hearty Vegan Salad. This salad has a symphony of textures and nutritional benefits.

    I want to shake up the salad world with creations that make you smile, and happy! I like to combine a variety of flavors and textures, making salads fun and always dressed with a homemade dressing. In this salad series you can always expect a salad that is easy to make that incorporates many nutritional elements that work together. You’ll be getting a hefty serving of veggies (some fruits and nuts likely as well!), plant-based protein, and a tasty homemade dressing.

    Each ingredient in this salad has been thoughtfully selected to provide a burst of health benefits, making this salad a powerhouse of nourishment.

    Ingredient Nutrition Breakdown

    Let's start with apples, which bring a sweet crunch to every bite. They also supply a wealth of antioxidants, dietary fiber, and vitamin C, supporting heart health and promoting digestive wellness.

    Carrots add a splash of color and are packed with beta-carotene. Our bodies convert beta-carotene into vitamin A, essential for vision health and immune function.

    The sweet potatoes are another nutrient-dense addition! They're high in beta-carotene, vitamins B6 and C, and fiber, contributing to overall health and well-being.

    Chickpeas are the protein heroes of this salad, offering plant-based protein, fiber, and a variety of minerals including iron and magnesium, supporting muscle health and energy levels.

    The red pepper slices make the salad visually appealing and add a crunch. They are also rich in vitamins A and C, antioxidants that enhance immune function and skin health.

    Avocado, with its creamy texture, introduces healthy monounsaturated fats, aiding in nutrient absorption and heart health.

    Ginger Vinaigrette Hearty Vegan Salad

    Toss apples, carrots, sweet potatoes, chickpeas, red pepper, avocado, hemp seeds, and pecans with a homemade ginger vinaigrette for a nutrient-packed vegan salad.

    Ingredients
      

    • 1 head of Romaine or other lettuce of choice
    • 1 pink lady apple
    • ½ cup shredded carrots
    • 1 sweet potato roasted
    • 1 15 oz can of chickpeas crisped in the air fryer
    • 1 red pepper
    • ½ cup pecans
    • 1 avocado
    • ⅓ cup hemp seeds

    Ginger Vinaigrette

    • 6 tablespoon olive oil
    • 2 tablespoon apple cider vinegar
    • 1 teaspoon mustard
    • ½ teaspoon ground ginger
    • salt to taste

    Instructions
     

    • Chop all of your fruits and vegetables
    • Cook your sweet potato chunks in the air fryer 15 min 400F and your chickpeas for 15 min 400F in the air fryer
    • Combine all of your dressing ingredients then pour on top of your salad fixings and enjoy!!
