    This gingerbread banana bread recipe was born during the holidays but can absolutely be made year round! It is spiced with ginger, nutmeg, all spice, and cloves. My favorite part about it is the cinnamon sugar crumble on top that you also sprinkle as a layer in the middle. It adds the perfect hint of sweetness from the coconut sugar and the cinnamon adds another layer of spices to this breakfast!

    Choosing The Right Banana

    Crafting this spiced dream begins with the choice of bananas. Go for the super ripe ones, their skins speckled with black. This promises a natural sweetness and a perfect moist texture to the bread. These bananas minimize the need for added sweeteners. This recipe just has a hint of maple syrup to elevate the richness without relying on refined sugars. That's right, it's refined sugar-free and delish! The cinnamon sugar crumble on top is made with coconut sugar.

    This banana bread is a testament to the beauty of vegan baking, showcasing how flaxseed acts as an excellent egg substitute, binding the ingredients with its natural gelatinous quality when mixed with water.

    The secret to its tender crumb lies in the vegan buttermilk. It's easily made by combining almond milk with apple cider vinegar and letting it sit for about 5-10 minutes until it curdles. This simple step introduces a light tanginess while ensuring the bread rises to fluffy perfection.

    Gingerbread Banana Bread

    This vegan gingerbread banana bread is packed with ginger, nutmeg, and all spice and topped with a cinnamon coconut sugar crumble.

    Ingredients
      

    • ⅔ cup almond milk
    • 1 tablespoon apple cider vinegar
    • 4 mashed bananas suppppper ripe
    • ½ cup pure maple syrup
    • 2 tablespoon ground flax seeds
    • 2-3 tablespoon almond butter
    • 1 teaspoon pure vanilla extract
    • 1 cup whole wheat flour
    • ½ cup white flour can do all wheat or all white if preferred, can also sub all for oat flour if GF for both flours
    • 1 teaspoon cinnamon
    • 2 teaspoon ground ginger
    • ½ teaspoon nutmeg
    • ½ teaspoon all spice or cloves!
    • 1 teaspoon baking soda
    • ¾ teaspoon baking powder
    • ½ teaspoon sea salt

    Cinnamon Sugar Crumble

    • ¼ cup coconut sugar
    • 2 teaspoon cinnamon

    Instructions
     

    • Preheat the oven to 350F
    • Combine milk and apple cider vinegar and let it sit for 2 minutes. Meanwhile, mash your bananas and combine with all other wet ingredients.
    • Add your milk mixture and ground flax seeds then mix. Add your dry ingredients and mix until combined.
    • Separately combine your cinnamon sugar crumble.
    • Pour ½ of your mixture into a parchment paper/greased bread pan then pour ½ of the cinnamon sugar crumble. Then pour the second ½ of the batter and sprinkle the cinnamon sugar mixture over the top
    • Bake for 55-65 minutes then let it cool for 30 minutes before enjoying!
