    Whisk together crisp cucumber, dill, lemon, and creamy non-dairy yogurt for a refreshing and quick Vegan Tzatziki that's as healthy as it is delicious.

    Ingredients
      

    • 1 ½ cups non-dairy greek yogurt if not vegan, feel free to use greek yogurt
    • ½ cucumber grated
    • 3 cloves of garlic minced
    • ¼- ½ lemon juiced
    • ¼ cup fresh dill chopped
    • 1 tablespoon olive oil
    • salt and pepper to taste

    Instructions
     

    • Grate the cucumber (keep the skin on) and then strain the excess water out.
    • Mince your garlic and chop the dill
    • Combine all ingredients in a mixing bowl and enjoy!
    • Storage: it will last 5 days in the fridge, and it will thicken once you put it in the fridge!
