    If there’s one stereotype I’m on a mission to debunk, it’s the notion that salads are the poster child for boring and sad meals. We’ve all had that sad iceberg lettuce salad with a few shredded carrots and a tomato. It’s not really satisfying and it definitely doesn’t make you HAPPY. So, I’d like to welcome you to my “NOT Sad Salad Series!” And welcome to this recipe: Kale Tahini Caesar Salad with Roasted Chickpeas and Sweet Potato. This salad has a symphony of textures and nutritional benefits.

    I want to shake up the salad world with creations that make you smile, and happy! I like to combine a variety of flavors and textures, making salads fun and always dressed with a homemade dressing. In this salad series you can always expect a salad that is easy to make that incorporates many nutritional elements that work together. You’ll be getting a hefty serving of veggies (some fruits and nuts likely as well!), plant-based protein, and a tasty homemade dressing.

    Massaging Kale

    Kale, the superstar green of this dish, is not just a trendy leaf. It's a nutritional powerhouse packed with vitamins A, K, C, and minerals like calcium and iron. Massaging kale is the secret to turning its tough leaves into tender bites. It also makes it more palatable and easier to digest.

    To massage kale, just add a pinch of salt or squeeze of lemon to the kale. Then use your hands and massage away!

    Nutrition Breakdown for the Kale Tahini Caesar Salad

    Aside from Kale, a powerhouse of nutrients, there are many other nutritional benefits of the non leafy greens in this salad!

    Sweet Potato: High in beta-carotene, sweet potatoes are excellent for eye health. They're also a good source of vitamin C, fiber, and potassium, and they provide complex carbohydrates for sustained energy.

    Chickpeas: Also known as garbanzo beans, chickpeas are a great plant-based protein source. They're rich in fiber, folate, and minerals like iron and phosphorus, supporting digestive health and heart health.

    Tahini: Made from sesame seeds, tahini is a good source of healthy fats, protein, and minerals such as magnesium, phosphorus, and iron. It's also a great plant-based calcium source! It's the perfect

    Kale Tahini Caesar Salad

    This kale tahini caesar salad has roasted chickpeas, hemp seeds, and sweet potato to add a variety of textures and nutrients.

    Ingredients
      

    • 1 bunch of kale
    • 1 sweet potato
    • 1 15 oz can of chickpeas
    • 2 teaspoon garlic powder
    • 1 tablespoon avocado oil
    • 1 avocado
    • ⅓ cup hemp seeds

    Tahini Caesar Dressing

    • ¼ cup tahini
    • 1 garlic clove minced
    • ½ lemon juiced
    • 2 teaspoon mustard
    • 2 teaspoon capers drained
    • ½ cup water
    • salt and pepper to taste

    Instructions
     

    • Cut your sweet potato into small chunks and open your can of chickpeas. Toss in avocado oil and garlic powder then put in the air fryer for 16 minutes shaking ½ way through (you may need to do 2 batches. If you don't have an air fryer, you can use your oven 400F ~30-40 minutes tossing ½ way through.)
    • Combine all of your dressing ingredients, dicing your capers, then set aside
    • Pinch a little salt on your shredded kale then mix with other ingredients and dress with your dressing. Enjoy!
