    If there’s one stereotype I’m on a mission to debunk, it’s the notion that salads are the poster child for boring and sad meals. We’ve all had that sad iceberg lettuce salad with a few shredded carrots and a tomato. It’s not really satisfying and it definitely doesn’t make you HAPPY. So, I’d like to welcome you to my “NOT Sad Salad Series!” And welcome to this recipe: Lemon Tahini Poppy Seed Salad. This salad has a symphony of textures and nutritional benefits.

    I want to shake up the salad world with creations that make you smile, and happy! I like to combine a variety of flavors and textures, making salads fun and always dressed with a homemade dressing. In this salad series you can always expect a salad that is easy to make that incorporates many nutritional elements that work together. You’ll be getting a hefty serving of veggies (some fruits and nuts likely as well!), plant-based protein, and a tasty homemade dressing.

    Lemon Tahini Poppy Seed Vegan Salad

    Dive into a bowl of vibrant goodness with our Lemon Poppy Seed Dressing Vegan Salad, a dish that's as nourishing for the body as it is delightful for the palate. At the heart of this salad is kale, a powerhouse of nutrition known for its high content of vitamins A, K, C, and minerals like calcium and potassium, crucial for bone health, vision, and immune support. But, to unlock kale's full potential, remember the magic of massaging it. A gentle rub with a bit of olive oil, salt, or lemon juice softens the leaves. This makes them tender and easier to digest, enhancing the salad's overall texture and flavor.

    We then add Brussels sprouts, thinly sliced to lend a crisp, slightly nutty flavor, complementing the kale's robustness. The burst of color and sweetness comes from pomegranate seeds, offering not just a juicy crunch but also a host of health benefits, including anti-inflammatory properties and heart health support, thanks to their rich antioxidant content.

    Chickpeas join the mix as a plant-based protein hero, bringing their satisfyingly creamy texture and fiber richness, which aids in digestion and provides a feeling of fullness. Their mild, nutty taste marries well with the crunchy walnuts, adding omega-3 fatty acids to the salad's nutrient profile, promoting brain health.

    But what truly sets this salad apart is the lemon poppy seed dressing. The zesty lemon not only brightens the flavors but also enhances iron absorption from the kale, while the poppy seeds add a delightful crunch and a dose of dietary fiber, calcium, and healthy fats.     Lemon Tahini Poppy Seed Salad

    Massage kale and toss with sliced Brussels sprouts, pomegranate seeds, creamy chickpeas, and crunchy walnuts. Drizzle with a homemade lemon poppyseed tahini dressing for a nutrient-packed, flavorful salad.

    Ingredients
      

    • 1 head Kale
    • 15-20 Brussels Sprouts shaved and roasted
    • 1 bell pepper orange
    • ⅔ cup pomegranate seeds
    • ⅓ cup almonds chopped
    • ⅓ cup walnuts
    • 1 15 ozcan chickpeas air fried
    • 1 avocado

    Lemon Tahini Poppy Seed Dressing

    • ¼ cup tahini
    • 1-1 ½ lemons juiced
    • 1 ½-2 tablespoon maple syrup
    • 1 tablespoon poppy seeds
    • 1 teaspoon mustard
    • ¼ teaspoon garlic powder
    • ½ teaspoon salt
    • 2-4 tablespoon water to thin

    Instructions
     

    • Mix all dressing ingredients together and set aside.
    • Rinse and drain your chickpeas, toss with oil and salt/pepper and put them in the airfryer for 16 min at 400F.
    • Toss shaved brussels sprouts with a bit of oil and salt then put them in the oven 425F for 15-20 min so they crisp and roast
    • Add all ingredients to a bowl and drizzle your poppy seed lemon tahini dressing on top and toss! Enjoy!
