Vegan Spiced Breakfast Cookie
Ingredients
- 2 ripe bananas, mashed
- ¼ cup of almond butter
- 3 tablespoon of maple syrup
- 1 tablespoon of almond milk (or any non-dairy milk)
- 1 teaspoon of vanilla
- 1 ½ cups of old fashioned rolled oates
- ¼ cup of almond flour (or oat flour!)
- 1 teaspoon of baking powder
- 1 tablespoon of chia seeds
- ¾ teaspoon of ground ginger (you can add more for an increased kick!)
- 2 ½ teaspoon of cinnamon
- ¼ teaspoon of salt
- ½ cup of chocolate chips (optional, but delicious)
Instructions
- -Preheat oven to 350F
- Mash your bananas and add all wet ingredients, mix then add all dry ingredients
- Shape into patties with your hands or using a hearty tablespoonful (they may be a bit sticky but that's okay!)
