Banana Bread Wild Blueberry Jam Bars

These vegan and gluten-free banana bread jam bars are the perfect bakery staple to make as a weekly breakfast meal prep.

Ingredients
  

  • 2 Cups Rolled Oats
  • -1 Cup Dates
  • 3 Ripe Bananas
  • Cup nut butter of choice I used peanut butter
  • Cup non-dairy milk
  • 1 ½ teaspoon Cinnamon
  • 1 teaspoon Vanilla
  • 1 teaspoon Baking Soda
  • ½ teaspoon salt

Wild Blueberry Chia Seed Jam

  • 1 Cup Frozen Wild Blueberries
  • 2 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • ¼ lemon juiced
  • 1 tablespoon water

Instructions
 

  • Preheat your oven to 350F and put some parchment paper on a 9x9 inch (or similar sized) baking pan
  • Soak your dates in hot water for 5 minutes then drain
  • Add your oats to a food processor and process until it’s like a flour.
  • Add all other ingredients (besides jam ingredients) to the food processor/blender and process until smooth
  • Over medium heat add your blueberries (fresh or frozen work here) to a pan. If frozen, wait until they have defrosted then add the rest of your jam ingredients. Mix until everything is incorporated (around 5 minutes)
  • Transfer the oat banana mixture to your lined baking pan then add the blueberry jam on top and swirl. You will likely use ½ of the jam!
  • Bake for 50 minutes then cool for 10-20 minutes before enjoying
  • It can be stored in the fridge for 4-5 days
