    If there’s one stereotype I’m on a mission to debunk, it’s the notion that salads are the poster child for boring and sad meals. We’ve all had that sad iceberg lettuce salad with a few shredded carrots and a tomato. It’s not really satisfying and it definitely doesn’t make you HAPPY. So, I’d like to welcome you to my “NOT Sad Salad Series!” And welcome to this recipe: Vegan Pasta Salad with a Harissa Dressing. This salad has a symphony of textures and nutritional benefits.

    I want to shake up the salad world with creations that make you smile, and happy! I like to combine a variety of flavors and textures, making salads fun and always dressed with a homemade dressing. In this salad series you can always expect a salad that is easy to make that incorporates many nutritional elements that work together. You’ll be getting a hefty serving of veggies (some fruits and nuts likely as well!), plant-based protein, and a tasty homemade dressing.

That's exactly what this Vegan Pasta Salad with Harissa Dressing is all about—offering you the best of both worlds. For this recipe, I chose a protein-packed pasta, enriching this dish with plant-based protein. It makes it both satisfying and nutritious and a substantial meal that keeps you fueled and full.     Vegan Pasta Salad with Harissa Dressing

    Toss protein-packed pasta with finely chopped veggies and vegan feta, then drizzle with a spicy harissa dressing for a nutritious, flavorful vegan pasta salad.

    Ingredients
      

    • 1 container protein pasta
    • ½ cucumber
    • ¾ red onion
    • 2 bell peppers
    • 10-20 basil leaves
    • ½ block vegan feta or regular feta if not vegan

    Harissa Dressing

    • 2.5 tablespoon harissa
    • ½ lemon juiced
    • 2 tablespoon red wine vinegar
    • ⅓ cup olive oil
    • 2 cloves garlic
    • 1 teaspoon dried oregano
    • ½ teaspoon mustard
    • salt and pepper

    Instructions
     

    • Cook your pasta and chop all of the veggies.
    • Mix your dressing together and combine with the rest of the salad ingredients.
    • Enjoy!
    • Can be stored in the fridge for 3-4 days
