    Buffalo Cauliflower Tacos

    Today, I'm over-the-moon excited to introduce you to one of my all-time favorites that's earned a top spot at my dining table – the one and only Buffalo Cauliflower Tacos! 🌮🔥 Seriously, these babies will win over the hearts of any guest gracing your dinner table.

    Plant-Based Power

    When I started going plant-based, I was looking for weeknight staples that I could make in under 30-minutes. One of my old roommates was obsessed with buffalo sauce. I've started dabbling in the spice game so I thought I could make a crispy cauliflower coated in buffalo sauce.

    Cauliflower is a great source of vitamins C and K, providing powerful antioxidants that help fight inflammation and support immune health. It's also high in fiber, which we could all use more of!

    I love adding cabbage and red onions as well for their nutritional benefits. Cabbage is packed with vitamin C, an essential antioxidant for skin health and immune function, and vitamin K, important for bone health. Red onions are rich in quercetin, a flavonoid antioxidant that has been linked to reduced blood pressure and protection against heart disease.

    Quick, Easy Buffalo Cauliflower Tacos

    These vegan buffalo cauliflower tacos are quick, easy, and delicious. They're a true celebration of plant-powered yumminess that'll sway the taste buds of even the greatest meat-enthusiasts. You can also change them up with different sauces. (I love a homemade Lime Tahini, but in a pinch use Brianna's Creamy Cilantro and Lime). I would also recommend getting some good tortillas to help complete the dish. My personal favorite are these Rise and Puff's Tortillas.

    Vegan Buffalo Cauliflower Tacos

    Need an under 30 minute dinner that doesn't sacrifice on taste? These buffalo cauliflower tacos will have any and all dinner partners scrambling over each other for the last one.

    Equipment

    • 1 Air Fryer (Oven also works, but will need to cook for longer)

    Ingredients
      

    For Cauliflower Tacos

    • 1 head of Cauliflower
    • 1 cup of Cornstarch
    • ⅔ cups of Water
    • ¾ cups of Buffalo Sauce
    • ½ head Cabbage
    • ½ Red Onion
    • Tortillas
    • Cilantro, Salt & Pepper to taste

    For Lime Tahini Sauce

    • ¼ cup of Tahini (can be vegan Tahini for a fully vegan recipe)
    • 1 tablespoon of Maple Syrup (which I adore)
    • 4 tablespoon of Lime Juice (roughly 2 limes)
    • 2 tablespoon of Water (to thin)

    Instructions
     

    For Cauliflower Tacos

    • Cut the cauliflower into bits. Preheat Air Frier (or Oven) to 400F.
    • Combine the cornstarch, water, and salt and pepper in a bowl until the cornstarch is fully incorporated.
    • Coat the cauliflower in the cornstarch mixture then put in the airfryer at 400F for 8 minutes.
    • Take the cauliflower out of Air Fryer and coat in a bowl with buffalo sauce. Place the coated cauliflower in the airfryer for another 9 minutes at 400F.
    • While in the Air Fryer, cut your cabbage, red onion, and cilantro.
    • Warm your tortillas, and when the cauliflower is done (this may take more time if using an oven to reach a desired crispness) assemble your taco.

    Lime Tahini Sauce

    • Whisk or shake together the tahini, maple syrup, lime juice, and water.
    • Pour on top of assembled taco.
