White Bean Kale Avocado Salad
Toss massaged kale with white beans, sliced avocado, hemp seeds, and sunflower seeds. Drizzle with a homemade lemon dressing for a quick, nutritious salad.

- 1 bunch of kale
- 1- 1 ½ avocado
- 1 15- oz can white beans
- ⅓ cup sunflower seeds
- ⅓ cup hemp hearts
- ⅓ cup pumpkin seeds
Lemon Dressing
- ⅓ cup olive oil
- 1 ½-2 lemons juiced
- 1 ½ tablespoon maple syrup
- 1 ½ teaspoon dijon mustard
- 2 cloves of garlic
- salt and pepper to taste
Start by rinsing your kale and chopping into small pieces removing the stem. Then add them to a large bowl with a squeeze of lemon juice and massage with your hands. The massaging process here helps kale become more easily digestible and takes away the toughness
In a bowl, whisk the dressing ingredients together until combined. I also like grabbing a small container with a lid and shaking them until they’re combined (adds a bit of fun!)
Dice your avocado and rince and drain your beans. Add your avocado and beans to your kale then add your seeds.
If you are not eating all of your salad now, I would recommend portioning out the amount you’re eating now then topping with your vinaigrette and mix it together.
For storage: I recommend storing your salad separately from your dressing to maintain maximum freshness. For this salad, you can pre mix and store in the fridge and it should keep for 3 days. I think it lasts and extra day or two if you keep the dressing separate
