Peanut Butter Jam Single-Serve Baked Oats

Blend oats with banana, peanut butter, and a touch of maple syrup. Then bake with a center filled with strawberry jam and peanut butter for a gooey, delicious breakfast treat.

Ingredients
  

  • ½ cup oat flour blended oats
  • ½ banana mashed
  • ¼ cup almond milk
  • 1 tablespoon date syrup or sweetener of choice
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla
  • ½ teaspoon baking powder
  • 1 tablespoon peanut butter
  • 2 teaspoon jelly

Instructions
 

  • Preheat the oven to 350F and grease a small ramekin. (8 oz is ideal but whatever you have will likely work!)
  • Mash your ½ banana in a bowl and mix with the rest of the ingredients except the peanut butter and jam
  • Pour 80% of the batter in an oiled ramekin and then add the peanut butter and jam in the middle.
  • Bake for 25-30 minutes. If you want a bit more of a gooey cake like texture, bake for 20-25 minutes, if you want them to be fully cooked, bake for closer to 30 minutes.
  • Storage: in the fridge for up to 4 days. I really enjoy 2-4X the recipe and meal prepping for the week, combining different flavors!
