Start by getting your goggles on, peeling your onions, and praying for not too many tears tonight.
Slice your onions then add them to a pan with oil and butter
Cook on medium low for 25-30 minutes stirring frequently. They should be caramelized and golden!
To your onion pan, add thyme, garlic, salt, pepper, pasta, and vegetable broth.
Simmer for 15 min on medium-high (until most liquid is absorbed). Stir from time to time
Add your coconut milk and grated parmesan cheese.
Stir to combine, simmer for a few minutes until the cheese melts then garnish with parsley
Storage: airtight container in the fridge for up to 4 days. I would add a splash of vegetable broth when reheating
