In a pot over medium high heat, boil your water. Turn off heat then add your flour, mixing until combined. Mix with a wooden spoon or rubber spatula until it forms into an elastic ball.
Let it cool for 5-10 minutes.
Take a plastic bag cutting a hole on one corner or use a piping tool and transfer your churro mixture inside.
Pipe your churros to be a few inches long in your air fryer (or pipe on a plate then transfer to your air fryer)
Spray some avocado oil on top of the churros then put them in the air fryer for 10-12 minutes at 400F (depending on the size of your piping tool) I did 10 minutes for ¾ inch churro width. Depending on the size of your churros you may need to air fry for an additional minute or two to get them to be golden brown.
While they’re air frying, heat your coconut milk/cream chocolate on medium heat in a small saucepan until fully melted and combined (about 3-5 minutes).
Serve your churros with a dusting of sugar if you’d like, or dip into the rich chocolate and enjoy!
If you're using oil instead of air frying, in a large pan over medium heat, pour ~¼ cup avocado oil so it fully coats the bottom of the pan and an extra ¼ inch above the bottom of the pan. Once the oil is hot (about 3-4 minutes), pipe your churros in the oil. Pan fry for 3-5 minutes on each side, turning occasionally to ensure they are evenly coated. The goal is to get them to be golden brown
